Mango Protein Sunshine Bowl (Salads & Bowls)

Ingredients

  • 1 scoop BariPro Mango Whey Protein
  • 1 cup cold cooked quinoa
  • ½ fresh mango, diced
  • Handful of spinach & rocket leaves
  • 1 tbsp roasted pumpkin seeds
  • 2 tbsp hung curd
  • 1 tsp lime juice
  • Pinch of chilli flakes

Method Mix BariPro Mango Protein with hung curd and lime juice to make the dressing. Layer quinoa at the base of a bowl, top with spinach, rocket and diced mango. Drizzle the mango protein dressing over the top. Finish with roasted pumpkin seeds and a pinch of chilli flakes. Serve chilled!
